Ginny Kesler-Day, M.A., R.D.
I’m an Air Force brat and lived all over, but spent my high school years in southern Calif. I then attended Cal Poly, SLO as an animal husbandry major for 3 years. I transferred to San Jose State and received a bachelor’s degree in Biological Science. I worked at San Jose Med center where I became interested in dietetics. I went back to school and earned a master’s degree in Home Economics, nutrition emphasis, then did a dietetic internship at San Jose Medical Center. I enjoyed working as a therapeutic dietitian at several different hospitals over a12 year period but when we moved to the Roseville area in the mid nineties, and I was asked to teach nutrition at American River College, I found “what I want to be when I grow up.” I loved and still love to teach this important subject!

Nutrition in a Nutshell :
- Enjoy your food
- Eat only when hungry
- Eat a wide variety
- Eat LOTS of fruits & vegetables
- Moderation in all things
What I like to do when I’m not teaching: My husband and I have 7 kids and 3 grandkids plus we have been caring for his disabled sister, so much of my spare time is spent in family-related activities. I enjoy many food-related hobbies: cooking for my extended family, experimenting with my solar cooker, planning wine-pairing dinners, canning fruits and vegetables from my garden- weeding the garden is less fun. . .I also enjoy bird watching, genealogy, reading, music, exercising, and almost anything computer-related.

Studies Show
This website was a result of my often-repeated refrain “studies show that…” as a means of encouraging family, friends and students to EXERCISE and EAT RIGHT. It is as simple as that!
